Latvian Pīrāgi

Felt the need for some pīrāgi (Latvian bacon and onion roll).

Been enjoying my Panasonic bread maker and decided to have a bash with the dough function...

This is what they look like and believe me they don't hang around for long!

Pīrāgi




Recipe for bread maker

Dough
2-3 teaspoons dried yeast (10-15ml)
6 teaspoons sugar to taste (30ml) my cousin used more sugar - so did I!
1/2 teaspoon salt (2.5ml)
1 1/4 cup milk (295ml)
1/4 cup sour cream (60ml)
1/4 cup water (60ml)
1/4 cup oil (60ml)
4.5 cups bread flour (Mine was 130grams / cup = 585g)
2 eggs

Filling
1 lb bacon - smoked / unsmoked - whatever you like
1 large onion
Fresh ground black pepper to taste.

Egg Wash - 1 beaten egg.

Basically bung all dough ingredients into bread maker bowl (Panasonic says use yeast, flour then other dry stuff finally adding the wet...

Start dough program.
Keep an eye on the dough so that it is not too wet, add flour if necessary.
(I needed around an extra 1/2 cup)

Whilst waiting for dough make the filling.
Finely chop the bacon and fry it, you do not want to brown it, just cook it through. Remove from pan when done and transfer to container.

Next finely chop the large onion and fry until clear, again do not over cook.
Add to the cooked bacon and grind a good dose of black pepper then mix it all up.
Drain excess fat then bung it in the refrigerator while waiting.

Get dough out of machine - should be overflowing the bowl - then 'punch' it down on a floured board.
Tear off approx a 2" ball of dough then Roll it out to take a heaped teaspoon of the filling.
Fold it over and pinch the edge closed, be careful not to get fat on the join as it will split when cooking.
Place on baking parchment on a baking tray with the join at the bottom.
Fill the tray up leaving at least 1/2" between the pīrāgi.

Brush them all with the egg wash then place in a pre heated oven at 350ºF (180ºC) for approx 15 minutes or golden brown.

After cooking turn them out on a cooling rack then watch 'em disappear...

What kind of oil did you use, Virgin Olive? You only let the bread rise once? Do you eat anything else with it? It looks worth a try.
Talk to yourself. There are times you need expert advice.

I am surprised the poor bread even had time to rise once before he wrapped his chompers round it!

Whatever oil you have I used virgin olive oil. It rises again after 'punching down' - didn't have time for anything else...
