Easy fish smoke

This happens to be a Salmon filet. Place the filet skin down on a greased rack(makes for easy cleanup. Then start a hand full of Kingsford coals. Then put a few wood chunks on the coals until it's smok'in like crazy. Cover foe 10-12 minutes. Serve with home made slaw and potato salad. I like a little lemon. This can be done with any fish, however, Salmon is easy because as soon as the fat starts oozing it's a done deal. Superb and don't forget the Dillweed!
