Tomato Pie

We can't go through summer around here without a tomato pie.  When the fresh tomatoes start coming in my daughter starts begging for one.  
 
1 pie crust
3 or 4 large tomatoes, peeled and sliced
1 1/2 cups of Hellmann's mayo
2 cups of sharp cheddar cheese
red pepper
salt & pepper
 
Poke a few holes in the bottom of your pie crust with a fork.  Put it in the oven for a few minutes.  Just until it starts cooking a wee bit.  
 
Take the crust out and fill it with your peeled and sliced tomatoes.  Mix the cheese, mayo and red pepper together.  Put the amount of red pepper that's good for you in it.  Y'all might not like it as firey as we do.  Salt and pepper your tomatoes in the crust.  Spread the cheese mixture on top of the tomatoes and bake it in a 350 degrees oven until the cheese gets bubbly.  
 
This is so rich and good and wonderful.  I serve it with anything.  It's good with steaks on the grill especially.  Heck it's good with anything.
