Seafood Casserole

queen of the woods

2 cups chopped onions
3 cups chopped celery
3 tsp. butter
1 tsp. salt
1/4 tsp. pepper
5 cups milk
3/4 cup flour
1/2 cup butter
1 lb. Velveeta cheese
10 oz can lobster meat
10 oz can crabmeat
3/4 lbs. cooked shrimp
1 lb. cooked scallops

Saute onions and celery in butter, salt & pepper. Set aside.
In large saucepan melt the 1/2 cup butter, gradually add the flour until it is well mixed...lower heat and gradually add the milk...mixing well after each addition.
Add the onions, celery and the Velveeta Cheese..cook until the cheese is melted and sauce is lightly thickened.
Add seafood and place in lare casserole ..
bake in 350 oven until browned and bubbly...
This recipe may be halved and quartered!
